Mexican Trash

Because I can't really think of another name for it, I call it Mexican Trash. It's sort of a Dorito casserole. And is seriously NOMMY.

You will need::

1 bag Nacho Doritos, crushed.
2C shredded chicken
2C shredded cheese--or more (I always use more!!)
1 Can Cream of chicken soup
1 Can ro'tel tomatoes
1/2C sour cream
1/2C milk
1/2 package taco seasoning (or more if you'd like)


Preheat your oven to 350. Spray a 2 quart casserole dish with nonstick spray.
Mix together all ingredients BUT Doritos.
Layer half the Doritos (about 2 cups) on the bottom, then spread half the chicken mixture, rest of the Doritos, and the rest of the chicken mixture. Add more cheese on top.
Cover with foil and bake for 35 minutes.

I usually double the recipe and cook it in a 9x13 pan for 45 minutes, just so we can have leftovers the next day.

Finished casserole!!!

    2. Been making this recipe since 2000 while working at Sara Lee (meat plant) as I got the recipe from a great co-worker. It’s called to us Mexican Chicken Casserole. No sour cream in our recipe & everything is same but that & use cream of celery in place of the sour cream. It’s amazing how much this recipe has gotten so changed & I truly like our version over all of them. We also use queso cheese dip along with shredded cheddar cheese & OMG is it good. For those asking my recipe calls for the 10 oz bag of Cheese Doritos. Happy Cooking :)

    1. The chicken isn't raw. Some used canned chicken. I personally use frozen chicken tenders and I bake them. I just add what amount of tenders I want and throw them in the oven at 350 degrees for about 30 - 45 mins allow to cool and shred.

    2. Boil raw chicken in water with chicken boillion cubes for about an hour. Pull them out and let them cool. Then shred :)

  4. When a recipe calls for shredded chicken it's usually already cooked. And with two cups needed that roughly equals two boneless skinless breasts that have been boiled. Hope this helps.

  6. I love this casserole its so easy. My family and friends love it too. They think I cooked all day but takes 10 minutes to put together. I do not find this racist at all keep the name when I give the recipe out my friends get a big kick out of it.

  31. Made this tonight and it is pretty good. Super easy, just boil and shred chicken and mix everything up. I omitted the milk because I didn't see the point. Also, not sure how you would eat it as leftovers, I think the chips would be too soggy if it sat around a few hours and was reheated. Overall though, my family enjoyed it and I will be making again.

  55. I have a household of picky eaters, and this recipe was a hit! Thank you for sharing. I find the comments about the name unnecessary and, as my mother taught me, if you don't have anything nice to say, then don't say anything at all...and just move on! So, back to the recipe-I recommend having some crushed doritos left over to sprinkle on top when served-they add a nice crunch. Also, it is great served with sour cream and olives. No, do not drain the rotels (at least in my experience). Thank you for an easy, no-fuss, weeknight dinner!

My family loved it, I also saved some of the Doritos and sprinkled over the top for added crunch. Served it with Spanish rice and refried beans, husband also ate it with chips to scoop.   62. This recipe was so easy. nutritious, feeds a croed, & is delicious left-over and frozen! I used (4) Chicken Breasts fillets, sliced in strips and sautΓ©ed in a Pan over Med. heat w olive oil/butter, fresh garlic and salt to taste. I let them cook down & brown, cool and pull apart as pieces. Then, I followed the recipe - so easy; I doubled it! And, I served in over a bed of brown rice/Bismati mixed rice in Salad Bowls w Lettuce on the top! It was like a chicken taco salad and is delicious!

    We have a Circle Mtg 2/4th Friday @ a home - potluck. I will make it again to serve there! Our members will love it too! Delicious!!! Thank you, Sparlee Momma! It is divinely inspired! So glad you have shared it w us! Blessings!

  73. The easiest way to make the shredded chicken is to cook 2 chicken breasts in 2 cups of water in a slow cooker on low for 7 1/2 hours. It shreds easily and falls apart.

  75. I make something similar. You can use tortilla chips as well.
    2 cups of cooked chicken.
    (However you prefer)
    1 can of cream of mushroom
    1 can cream of chicken
    1 can black beans
    1 can corn
    1 can rotel
    1 can green chili's
    1/2-1 pack of taco seasoning or homemade taco seasoning
    1/2 cup sour cream and 8oz of shredded cheese.
    Pretty much drain and mix everything together and cook just like this recipe recommends and my family loves it.

I had a black mammy (her choice of names) as a young girl whom I loved just like a mother. I never paid attention to colors when it came to people UNTIL BLM. That association has changed everything for me and now I can say yes, I do pay attention to colors.   81. Oh what a hit for our Memorial Day get together!!! I knew it would be, so I printed off the recipe for all those who liked it. Several women commented that they would be using this dish for a bridal shower and office partes. Needless to say...I came home with an empty dish and no printed recipes. Thanks so much for this wonderful recipe. Great job for sharing.

  82. It's not a "racist thing! I have tried this recipe as I wrote about prior in comments. It was quite a hit at a Memorial Day gathering. It's an awesome recipe and that's all that matters. Just overlook those of ignorance. And if anyone doesn't know what ignorance is...it means untaught! Now are you going to call that a "thing of some sort?" People just focus on food here. Thanks.

  89. Mexicans will eat anything American made! But there is one place you don't see Mexicans and that's at a Mexican restaurant. And Mexicans love living the freedom life in the USA. My mexican friends love this recipe but usually add lots of fresh jalapenos. Oh so yummy! Dont knock something till you have tried it! Perhaps those people leaving trashy comments are the trashy people.
